What's for lunch Wednesdays!

    Hummus and Balsamic Vinaigrette Veggie Wraps 
So, us Griesemers are changing our ways. Actually we have been changing them for some time now, but I just added What's for lunch Wednesdays to my blog so I thought an explanation was in order. In short - we have virtually given up all meat and dairy products and it has worked wonders for our health, energy, and weight! (I still love a good grilled chicken every now and then, but Corey has totally stopped eating any meat.) Everyone asks, isn't it hard to give it up and our answer: when food tastes this good and is so good for you - No!

Here is the Hummus Recipe:
1 can of Chick Peas
1 tbsp of soy sauce
1 tbsp Worcestershire sauce
2 tbsp  Veggie Broth
Lemon Juice to taste
Blend in food processor (I use the magic bullet) Add more veggie broth to get the desired consistency.

Then we spread the hummus on the wrap and add all the veggies we want. Today was green, red, and yellow peppers, spinach, sweet onions, and tomatoes. And drizzle with a balsamic vinaigrette. The bread/wrap we use is Joseph's Flax Oat Bran & Whole Wheat Lavash Bread and it so yummy!!! Try it, You'll love it!
